Their winery is also one of the original wineries in the Blaye sub-region, and Peybonhomme was granted cru status in the 1868 classification. This wine is made from a slow and gentle fermentation and maceration of estate Merlot, followed by a winter’s-long elevage in concrete (to preserve fruit-first freshness). Allocated exclusively to use by our friends at Vino al Vino. Raspberry compote, red plum, red currants, and morello cherries. Light baking spice (but not oak-level-spice) and plenty of mouth watering acidity.
